Method: All ingredients into an ice-filled Boston, shake, serve over crushed ice and garnish

Glassware: Rocks

Garnish: Cherry bitter & Lemon Squeeze and lux cherry

Raspberry Colette

Spirits: Absolute Raspberry 50 ml, Crem De Mure 20 ml, Lychee Juice 50 ml, Lime Juice 15 ml, Sugar Syrup 10 ml, Lemonade ½ bottle, Raspberries 2, Lime wedge 1

Style: Shake and strain over cubed ice

Method: Shake and strain and pour all ingredients in to a cocktail glass with cubed ice. Top with lemonade

Mojito

Spirits: Bacardi White Rum 50 ml, Gomme 25 ml, Soda Water 150 ml, Lime Juice 10 ml, Lime wedges 5, Mint leaves 12

Style: Build

Method: Muddle lime wedges, gomme and lime juice in glass, bruise mint with palm and add to glass, add rum then stir, top with crushed ice, stir again, top with soda, gently stir and garnish

Darker & Stormier
Spirits: Goslings Rum 50 ml, Lime Juice 30 ml, Wray and Nephew overproof Rum 5 ml, Gomme 5 ml, Fresh ginger grated 2g, Goslings Ginger Beer 250 ml, Lime wedges
Style: Build
Method: Muddle lime, lime juice, Gomme and ginger in highball, add ice, add both rums, stir until well mixed, to the top with ginger beer, gently stir and garnish
Glassware: Tall etched cocktail
Garnish: Lime wedge & crystalized ginger half cubed and half crushed ice
Straw: 1 compostable
